HOW TO GROW ARUGULA

Direct seed as soon as soil can be worked and after last hard frost. Sow every 2-3 weeks to ensure continued harvest. Cut and come again 2-3 times, harvest at any stage, best when baby 4-6 inches. Slower to bolt if grown in the early summer and fall, leaves taste sharper after flowering. Over winters in many areas. Easy to grow, may self-seed and create a carpet of arugula for spring. Soil pH 6.1-7.8. Hardiness zones 6. Annual.

Arugula is a fun plant for any garden. Since it reseeds and volunteers so well, gardeners often find that they only need to sow Arugula once, let it flower and go to seed in its second year and it will come back year after year!  As a cool season green we enjoy two harvests of Arugula a year - late fall and early spring. In milder climates, Arugula can be enjoyed through the winter. In our zone 7 climate we find Arugula growing through all but the coldest weeks of winter. In colder climates Arugula does exceptionally well during winter in a greenhouse or hoop house. The dark green leaves are a welcome site when not too many other fresh greens are available! Arugula has a peppery bite when eaten raw but the spiciness disappears when cooked. We enjoy adding raw leaves into our salads, sandwiches and soups. Arugula is also especially delightful chopped and added by the handfuls to a pizza at the end of baking to gently cook until just starting to wilt so you get some of the pepperiness, but not too much.
