HOW TO GROW BEET
Usually direct sown as soon as soil can be worked but may be started indoors. Summer sowing after mid July are generally poor. If you like, when direct sowing, mix beet seeds with fast-sprouting radish seeds to mark the rows. Start indoors 4-6 weeks before last frost, plant out 2 weeks before frost. For fall harvest, transplant 10 weeks before first frost, without additional protection. In a hoophouse, you can plant 2-3 weeks later. Sow every 3-4 weeks for consistent supply. Harvest beets when 2–3” for best sweet flavor. Beets can grow large and get woody if left in the field. All parts of the beet plant are edible. Soil pH 5.6-7.0. Hardiness zones 8. Biennial.

The genius of Alan Kapuler at work, this is an interbreeding mix of three distinctive heirlooms: Crosby Egyptian Purple, Lutz Overwintering and Yellow Intermediate Mangel. Grex, a term from orchid breeding, means that there is variation within this gene pool that continues to morph. It also means a greater extent of disagreements in our trialers’ evaluations than for most of our selections. Over time we have noticed the extent of variation decrease and the flavor improve. There are three distinct colors in this gene pool: a pinkish red with some orange in it, a bright gold, and a beautiful iridescent orange. Unusual vigor, glowing colors and length of these gradually tapered elongated roots. The Lutz influence manifests in their size, as much as 3-1/2" across and 7–8" long. Abundant beet greens as well. Dr. Kapuler is founder of Peace Seeds. At age 16 he entered Yale, the youngest student in his class of 1,000 and graduated first in his class. His undergraduate honors thesis earned him the highest grade Yale had ever bestowed and was eventually published in the Journal of Molecular Biology. After earning his doctorate in molecular biology at prestigious Rockefeller University he worked with world expert on nucleic acids A.M. Michelson and apprenticed at the lab of future Nobel Prize winner Howard Temin. Alan and Linda Kapuler have been organic growers since 1973.
